Located in the Spanish fishing town Vilanova, on the outskirts of Barcelona, Gin Mare markets itself by featuring one of Spain’s most famous agricultural products: Arbequina olives. Indeed, the company says there’s a slight variation between bottles because of the differences in the acidity of the grapes used for making the gin. However, despite the emphasis on the olive, however; Gin Mare is perhaps even most notable for its focus on traditional herbal ingredients among the botanicals. These include rosemary, thyme, and basil which complement the expected juniper and lemon. Together, these botanicals create a gin that is well balanced, reflecting some aspects of its London dry origins and its sweeter, more citrusy evolution in the West.
